 Continued from yesterday.....Ok so here is the recipe for Chicken and Black Rice....Just to let you know, i dont measure ingredients a lot so if you decide to make this you can pretty much put anything in, but i will show you what i put in the recipe.

1 large chicken breast thinly sliced...1 medium sized capsicum (red bell pepper) chopped...bunch of asparagus chopped, bunch of spring onions chopped, snow peas(as many as you like) sweet potato or pumpkin chopped into small pieces, vinegrette or juice of 1 lemon, fetta cheese and of course 2 cups of black rice...if you cant find any black rice, brown rice is perfectly fine. Wash the rice and soak over night if you want, if you do soak it it may only need to be cooked for about half and hour, if not it will need approx. and hour. Cover with water and if it absorbs within the time add more. Meanwhile in a frypan add oil, i use extra virgin olive il, its healthier...cook your chicken till it is white, do not brown it, set aside.....add chopped veg and cook till soft. when the rice is cooked add to the veg and then add chicken and mix through. Add as much vinegrette as you like to taste, or the lemon juice and crumble fetta cheese over the top and serve.
