In my first blog I introduced you to the new room that was created. Friendly Fun and Food Chat.

If you have had the opportunity to visit the room, I hope you enjoyed your visit and thank you for stopping in. We have some good chatters that come in and sit and relax with us. I think that we have one of the best hosts around. She came from another site where she was also a host in a room. She has a natural friendliness and shares her joy with all chatters who come into the room. We are a very light hearted group of individuals that share jokes, cares and just a friendly atmosphere. One of the many good things that come from this room is some of the recipes we share among each other. We have some very good cooks that enjoy sharing as well as trying others recipes. This blog is about one of the recipes that was shared on my site as well as in the room.

The host that gave me this recipe is from Australia and she is a sweet lady, her name is Heather. So when you come in the room if you come in say hi to Heather as well as our other outstanding host Ripley. One of the owners, Kitten is a fun very straight forward lady that is opinionated but in a good way, she is as friendly as they come and she has a very caring heart. She avoids drama and has no issues with telling someone if they are going on about it. We created the room for enjoyment and relaxation. No drama, No disruptive issues or people.

Now with that said I want to share the recipe that Heather was kind enough to share with our little family of friends and cooks.

Vegetable Fritters

1 Zucchini (grated)

1 Potato (grated)

1 Carrot (grated)

1 small Onion (grated)

1 small Sweet Potato (grated)

1/2 cup Peas (optional)

2 Eggs

1/2 cup Flour

Salt and Pepper to taste

Chopped Parsley or Chives (fresh or dried)

Add grated vegetables to a bowl, add eggs, salt and pepper, flour, parsley mix together till well combined.

Heat frying pan over medium heat, add oil of choice (my choice is olive oil).

Add spoonfuls of mixture, (you pick how big or small), Cook approximately 5 minutes on each side.

Makes a great side dish with most any meal.

I hope you try this as it is a very good dish and very tastey and healthy. This from what I was told by Heather is one of her favorite side dishes for her family. I hope you enjoy this and give it a try.

More recipes and ideas will follow on all sorts of different foods or cooking techniques.

Thank you for your time and reading this latest installment from the Friendly Fun and Food room, visit my site at www.homecookedfavorites.weebly.com.
